Richard D. Ludescher has had a multi-disciplinary academic career, studying anthropology and philosophy at the University of Iowa (B.A. '73), chemistry at the University of Oregon (Ph.D. '84), and muscle biophysics at the University of Minnesota, before accepting a position in food chemistry in 1988 at the Department of Food Science, Rutgers University—New Brunswick where he is currently a full professor. In addition to running a research program in food physical chemistry and optical biophysics and teaching courses in the physical properties of foods, he has served as Undergraduate Program Director (1993-1998) and Director of the Graduate Program (2000-2003) in Food Science, as Campus Dean for Undergraduate Education on the George H Cook Campus (2006-2011), and since 2011 as the Dean for Academic Programs at the Rutgers School of Environmental and Biological Sciences. While at Rutgers he has won numerous teaching awards at the department, school, university, and national levels.
